Capers are the unripened flower buds of Capparis spinosa, a prickly, perennial plant which is native to the Mediterranean and some parts of Asia. Our capers are grown naturally, harvested from wild areas then pickled in a brine solution consisting of water, sea salt and vinegar. Capers are very rich in vitamins and anti-oxidants. These nutrients provide high levels of protein, fiber and iron. They also help in lowering the LDL cholesterol. Capers can be used in a different variety of foods but especially in Mediterranean cooking. Its pickled buds are used as a flavoring in antipasto salads and as a topping in pizzas. Their tangy flavor adds a unique taste to salads, dressings, beans, sauces, vegetables and a variety of main dishes such as fish.
